「もろみ」は、「黒酢」を熟成させている間に、かめの底に沈殿物として溜まる固体の物質です。豆腐を造る際の「おから」やビールを醸造する際の「ビール酵母」などと同様に、栄養価の面で大変優れています。私たちは中でも、中国四大黒酢のひつとである杭州産の黒酢からできる「もろみ」に注目しました。>
ひとつひとつの工程を、昔ながらの製法を守りながら、手作業で行っています。天候や温度・湿度に気を配りながら熟練の職人によって良質の「もろみ」がうまれます。その結果、有機酸を含めアミノ酸の含有量は一般のもろみと比べものにならないくらい含まれています。
