鹿児島県霧島市福山町の坂元醸造は、江戸時代から200年変わらない伝統の黒酢造りを守り続ける老舗。「黒酢」と命名したのも坂元醸造で、本家本元の醸造元です。屋外に置かれた5万以上の薩摩焼をはじめとする陶器製の壺の中で、地元の米と麹、廻（めぐり）の水と呼ばれる天然水だけを仕込み、じっくり1年間かけて自然発酵・熟成させる、「壺造り」と呼ばれる伝統製法を今も受け継いでいます。その熟成過程の中で、壺底にわずかに溜まる稀少な成分「黒酢もろみ」にサントリーは着目。黒酢もろみはアミノ酸やビタミン類などに加え、米や麹由来の繊維質なども魅力的な、まさに黒酢熟成の結晶です。
もう一つの素材、スタミナ野菜の代名詞「にんにく」は、生産量日本一を誇る、青森県産に厳選しました。その中でも、一流料理人からも指名買いされるブランド種「福地ホワイト六片」を使用しています。「福地ホワイト六片」は六片の粒が大きく、甘味があるのが特長。その大きさを一般的なにんにくと比較すると、差は歴然です。1粒1粒が大きく、しかも肉質がぎゅっとしまった、高級にんにくとして名高いブランド種です。サントリーは、栄養をほとんど損なうことなく、においが気になりにくいよう加工を施しています。
