青森県の山間地にある田子町（たっこちょう）。ここで栽培されるにんにく「福地ホワイト六片種」は、雪のように真白な色、ふっくらとしたエレガントな形、そして粒が大きく身のしまった品質で、日本全国にその名を知られています。1968年代後半から、有機質堆肥を入れた土づくりにはじまり、田子の人々にたっぷりの愛情を注がれ育まれた極上のにんにく。厳しい冬の間、雪の下で肥えた土壌の栄養を吸収し糖度をため込みます。そして雪解けと共に一気に土壌の栄養を取り込み成長します。「熟成爆砕黒にんにく」には、この田子産の「福地ホワイト六片種」を使っています。
熟成製法
主原料の黒にんにくは、にんにくを熟成させて作ります。「福地ホワイト六片種」を特殊な熟成方法により、１２日間かけてじっくりと熟成させることで、栄養成分が凝縮された立派な黒にんにくになります。
黒にんにくパウダーに仕上げる爆砕加工
熟成された黒にんにくは・爆砕加工という特殊な技術によって粉末化されます。爆砕加工とは、昔なつかしいポン菓子の製法に似た原理の加工法。これによって、単なる粉末とは違い、微細な多孔構造をもった黒にんにくパウダーが出来上がります。粉末化することで、にんにくの臭気のもとである成分、アリシンが下がることがわかっています。また、ポリフェノールなどの有用成分を増やすことができます。
